Today I bought Halloumi for the first time and I wasn't sure what to do with it. Luckily in its package had different cooking suggestions and the one that appealed the most to me was grilled halloumi in a salad with seasonal fruit. Having also found very cheap organic mangoes in the market, I decided that mango should work great and went to check whether I could find any recipes online that had mango and halloumi mixed in a salad. To my surprise, it turns out there are quite a few recipes of mango and halloumi salads out there. I went for Jamie Oliver's one. Easy and simple. As always, I did my own variations. I skipped the pine nuts and added pecan pieces instead. Also, I made a a sweet vinagrette with honey. The result....Delish!
Grilled Halloumi and Mango Salad
Prep time: 15 min
Serves 4
Ingredients
For the salad:
6 slices of Halloumi
3 Mangoes, sliced (pear or strawberries would work great as well)
2 Avocados, sliced
150 g of Arugula, or as much as you want
Pecan pieces
(Optional) Mint leaves, cut small
For the dressing:
1/4 cup Olive oil
1 tbsp of Honey
1 tbsp of Vinegar of Modena
Pepper (I don't add salt because Halloumi is already quite salty)
Place arugula in a plate and add avocados and mangoes.
Prepare the dressing by mixing all the ingredients together and whisking until combined.
Heat up a non-sticky pan or a grill and then add the Halloumi slices. Lower the heat to a medium and cook for about 5-8 min until starting to get brown. Then, turn the slices and cook 5 minutes more to get the other side brown. Once grilled, cut Halloumi slices in tinier pieces and add on top of the salad. Add pecan pieces, mint if using, and dressing.
